Good Morning, Sunshine!

Yep, another sunshine post today! (it is actually snowing right now, lol)

Devon and Kaytlin have been having some blood sugar issues lately, along with Donnie and I who are hypoglycemic. Our doctor calls it "carb sensitivity" which really is low blood sugar, or hypoglycemia. He just won't call it that.

He told Devon he needs to just eat better, more protein and a better balance of carbs. I feel guilty because the kids eat cereal for breakfast every day. It is easy, quick, tasty. Otherwise they have been known to eat bagels for breakfast. Either way, carb city.

So, I determined to start making my children breakfast every day. I started last Sunday. I am attempting to make a selection with plenty of protein and only a bit of carbs. Throw in that I am not only NOT a morning person, I hate breakfast.

How is it going, you ask?

Well, let me fill you in.

Day 1 the kids all look at me funny as I hand them plates of omelets and bacon. Well, it is Sunday, so maybe mom is feeling exceptionally good???

Day 2 they look at me weird. They have mixed feelings at this point. Hope-Anne thinks it is great. Kaytlin is rejecting the meat, even though she took it.

From there it has been more of the same. Mostly they like it, but none of them want the same foods. Sure, I can say "take it or leave it" but they will leave it. Devon decided on Friday that he no longer eats breakfast after eating it all week and enjoying it, I thought. Kaytlin is extremely picky, the eggs have to be over easy and she will only eat bacon, no sausage links or patties. Cody will, and does, eat anything I make. Hope-Anne not only enjoys it, she makes requests and cleans her plate. She says it makes it easier to get through the puny amount of food that they serve at lunch that is edible.

Donnie is loving it, let me tell you! It is a must for him to eat an egg every morning. It is a requirement of his body to maintain his blood sugar. I like that it saves me the $4.?? he spends every day at McDonalds.

I do need to be a little more organized in my shopping, though. I impulsively bought a jumbo size bag of our favorite Krusteaz pancake mix but I didn't buy syrup. Nope, I did not. Do I remember that before I start cooking? Nope. So we have to resort to either light corn syrup or powdered sugar, lol.

We will get this down, though. I am happy with the results, even though the kids are exasperating some days. I am working on a weight loss plan, and that includes eating breakfast, which I hate, but this makes me eat it more often than normal.

don't forget cottage cheese and chocolate protein shakes! Oh and string cheese.. yuumm

I often make stick boy egg muffins since he loves those. I have be eating them in the am since my blood sugar has been bad, I hate breakfast food anyways, I would rather eat left over dinner food.

I actually only buy syrup when someone accidentally throws away the one I've been using to put home-made syrup in. Next time you find yourself out of pancake syrup, just throw equal parts of white sugar, brown sugar and water into a sauce pan and bring it to a boil. I prefer mine hot, which means it's a bit runny, but if you let it cool, it's exactly like the stuff in the bottle, but it tastes better.

My kids eat breakfast at home THEN they eat breakfast at the cafeteria! The poor starving ones.

We stopped eating cold cereal over a year ago because it was just too expensive. So usually breakfast time at our house is a free-for-all. Sometimes, I'll make pancakes or french toast ahead of time and have it ready for them to heat up in the microwave. (They LOVE that.) On Saturdays, I'll make omelettes, but that takes a lot of time, and I hate being a short-order cook. Mostly they heat up their own oatmeal, toast or bagels. (The bread we get for free every week, so it's saved us a bundle.)

This morning, I ate some refriend beans and scrambled eggs. It really helped my appetite control throughout the day and saved me money, too.

Breakfast is a great way to start the day! Keep it up! I agree...it is better for all of you. :) Terry has Hypoglycemia, too.
